Pressure cook the pumpkin with 1tsp salt for 3-4 whistles.
Once cooked, peel the pumpkin and cut in cubes.
In kadai add 3 tsp of oil, when oil is heated add mustard seeds with some curry leaves and red dry chillies
Add 1 tsp of hing and poppy seed
Once poppy seeds are brown add the cut pumpkin and mix well
Add salt and groundnut powder and cover with lid
Garnish it with coriander
Optional: add curd to the sabji to make it like raita
